This is lasagna with a Mexican kick. Instead of red sauce, you’re building layers around birria beef and a spoon-coating reduced birria sauce (key word: reduced). The three cheese béchamel is the bridge that keeps it lush and cohesive, and the jalapeño + cilantro give you those bright green hits that keep the whole thing from feeling too heavy.

The only rule: no watery layers. Moist, yes. Brothy, no. If you nail that, it slices like a dream.
